Chef Zeb stevenson from Livingston's Restaurant and bar shows us how to make Spice Rubbed Steak for Two!

Spice Rubbed Steak for 2

Ingredients

  • One Large Porterhouse or Thick-cut Sirloin Steak 1.5 - 2 lbs.
  • 2 tbs butter
  • Salt
Wet Rub
  • ½ tbs Black Pepper
  • 1 tbs Paprika
  • 1 tsp Celery Salt
  • 1 tbs Brown Sugar
  • 2 tbs Worcestershire
  • 1 tbs soy sauce
  • 2 tbs olive oil

Directions

  1. Whisk together all ingredients and rub the steak with the mixture. Rest in the refrigerator for 2 hrs.
  2. Heat a cast iron pan over medium-high heat. Once the pan is hot, sear the steak for 2 minutes on all sides
  3. Place butter on top of steak and place in 400 degree oven for 3 minutes. After 3 minutes, turn steak over and place back in oven for 3 more minutes. Depending on thickness, this will yield a nice, juicy steak cooked medium. If you're using a porterhouse, the meat next to the bone will always be more rare, be sure to include extra cooking time to meet your preference. For a thick cut of meat, 2 minutes per side will be necessary to go from medium to medium-well.
  4. Take the steak out of the pan, pour any juices left in the pan over the steak and rest the steak for 3-5 minutes before cutting.
